A great breakfast or snack for when you’re on the go, these Seedy Apricot and Oat Breakfast Biscuits are delicious and will keep you feeling satisfied. This recipe makes approximately 8 Biscuits.

Ingredients

  • 1 cup whole rolled oats
  • ¼ cup dried apricots, chopped
  • ¼ cup desiccated coconut
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ tsp baking powder
  • 1 tsp cinnamon powder
  • 1 medium banana, mashed
  • 2 tbsp tahini
  • 1 tbsp honey

Method

  1. Line a baking tray with baking paper and preheat oven to 180 degrees.
  2. In a large bowl, add oats, apricots, coconut, seeds, baking powder and cinnamon. Mix to combine.
  3. In a separate small bowl, add mashed banana, tahini and honey. Stir to combine. Mix wet ingredients into dry ingredients.
  4. Roll mixture into golf ball sized balls, and place on the tray. Press down slightly.
  5. Bake for around 15 minutes, or until golden.
