Cacao Chia Pudding with Berries

This rich, chocolatey pudding is a satisfying snack that curbs sugar cravings without causing blood sugar spikes. Chia seeds are packed with fibre and omega-3s, helping to slow digestion and keep you feeling fuller for longer. Meanwhile, cacao not only satisfies your chocolate fix but also acts as a prebiotic, nourishing the beneficial bacteria in your gut and supporting overall digestive health. 

Serves: 2 

Ingredients: 

  • ¼ cup chia seeds 
  • 1 cup milk of your choice  
  • 1 tbsp raw cacao powder 
  • ½ tsp vanilla extract 
  • ½ tsp cinnamon  
  • 2 tsp maple syrup 
  • Pinch of sea salt 
  • ½ cup mixed berries 

Toppings: 

  • 1 tbsp crushed almonds, walnuts or seeds (adds protein and crunch) 

Instructions: 

  1. In a mixing bowl or jar, whisk together the milk, cacao, vanilla, cinnamon, salt, and maple syrup.
  2. Stir in the chia seeds until well combined. Add the berries.
  3. Cover and refrigerate for at least 4 hours (or overnight) until thick and creamy. 
  4. Top with nuts, and optional yoghurt before serving.
