This rich, chocolatey pudding is a satisfying snack that curbs sugar cravings without causing blood sugar spikes. Chia seeds are packed with fibre and omega-3s, helping to slow digestion and keep you feeling fuller for longer. Meanwhile, cacao not only satisfies your chocolate fix but also acts as a prebiotic, nourishing the beneficial bacteria in your gut and supporting overall digestive health.
Serves: 2
Ingredients:
- ¼ cup chia seeds
- 1 cup milk of your choice
- 1 tbsp raw cacao powder
- ½ tsp vanilla extract
- ½ tsp cinnamon
- 2 tsp maple syrup
- Pinch of sea salt
- ½ cup mixed berries
Toppings:
- 1 tbsp crushed almonds, walnuts or seeds (adds protein and crunch)
Instructions:
- In a mixing bowl or jar, whisk together the milk, cacao, vanilla, cinnamon, salt, and maple syrup.
- Stir in the chia seeds until well combined. Add the berries.
- Cover and refrigerate for at least 4 hours (or overnight) until thick and creamy.
- Top with nuts, and optional yoghurt before serving.
