These low-sugar cookies are a delicious and nutritious treat that offers a range of health benefits. The carrots provide a good dose of beta-carotene, an antioxidant that supports against conditions like heart disease and cognitive decline and a strong immune system, while the walnuts add polyphenols, which are powerful antioxidants that have been shown to reduce inflammation and protect against chronic diseases. Rolled oats contribute fibre to aid digestion, and the extra virgin olive oil supplies monounsaturated fats, beneficial for supporting overall heart health and also known for reducing inflammation.

Ingredients
- 1 cup rolled oats
- ¾ cup almond meal
- ½ cup walnuts, chopped
- ¼ cup shredded coconut
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tbsp ground flaxseeds
- 1 egg
- ¼ cup extra virgin olive oil
- 1 tsp vanilla extract
- 1/3 cup honey
- ¾ cup grated carrot (squeeze out the liquid once grated)
Method
- Heat the oven to 180°C.
- In a large bowl add the oats, almond meal, walnuts, coconut, baking powder, cinnamon and flaxseeds.
- In a separate bowl or jug, mix together the egg, extra virgin olive oil, vanilla and honey. Pour into the dry ingredients and stir until combined.
- Fold in the carrot.
- Line a tray with baking paper and place heaped dessert spoons of mixture onto the tray and shape into round cookies around 2cm thick.
- Bake for 15-20 minutes, until golden.
- Allow to cool so they firm up before eating.
